I've been with THREE in the UK for about ten years. The £13.50 monthly 100GB data pack includes 12GB roaming in 70 countries, including all of Europe. I normally buy the £10 pack.
It also works in Australia like I'm in the UK. I can make an receive calls to my UK number as if I'm there.

Only you would know that. Comes down to how much you use it to stream media or use video chat like FaceTime.

A sim in Europe will be valid in all EU countries except the UK. Don't forget the Brits have "brexited" and as such, their operators are no longer obliged to offer free roaming with the rest of Europe.
How much you pay and how much data allowance you get will depend on which country you enter in Europe.
Of course, if your phone is capable of it, the advance purchase of an e-sim is probably a better choice.
I think Vodafone has excellent coverage and is pretty competitively priced. Here are their data only plans:
Also pretty good and very flexible is Bytesim, which I have used recently in the US (T-Mobile) and Australia (Vodafone). I don't know which carrier they use in Europe though.

Of course, you can try to find a balance between actually enjoying the places you visit and the videos you watch...

I can also vouch for Three.
Did a lot of research on this when I went to England and Europe in 2017, and Three was by far the best in terms of value and their coverage was excellent across multiple countries.
Easy as to get it all going - no mucking around required.

THREE has changed its plans a few times since then. For a while, you couldn't get Go Roam on a contract. But now, the contracts cover more countries than the PAYG. Their plans aren't really aimed at foreign travellers, but Brits who venture abroad. I probably wouldn't go in that direction unless I were spending extended time in the UK.
THREE has also swallowed 02 and are about to merge with Vodafone.
